Delicious Thai Spring Roll

What we will need:

2 ounces dry soy vermicelli
4 eggs, beaten
1 onion, finely chopped
2 ounces mushrooms, chopped
4 ounces small shrimp, chopped
1 lb ground pork
2 tbsp vegetable oil
1 medium sized carrot, shredded
3 ounces bean sprouts
2-3 pinches ground black pepper
1 tbs light soy sauce
3 tablespoons fish sauce
1 clove garlic, chopped
20 rice wrappers

Directions:

1. Soak the dry soy vermicelli in lukewarm water for 20 - 30 minutes in a large bowl, then drain.
2. Mix the vermicelli with all other listed ingredients (except for the wraps).
3. Fill each of the moist rice wraps with 2 - 3 tablespoons of the vermicelli mixture. Roll and let them to set for 20 minutes.
4. Heat the oil in a large sauce pan to 375 F.
5. Fry 2 or 3 spring rolls at a time until golden brown, which should take about 2 or 3 minutes. 6. 6. Served with sweet chili sauce.
